Low-Histamine Pumpkin Seed Pesto
After my recent post on pumpkin seeds, I was sent a lovely message by alerting me to the delights of pepita pesto (pumpkin seed pesto.)
And it’s so easy. I googled it, then took about three recipes as inspiration for my own.
Toasting pumpkin seeds ✅ in dry skillet.
Then adding a cup of olive oil ✅, plenty of basil ✅, parsley ✅ and lots of chopped garlic (listed as 🤔 on the emoji-based food list on the site but normally tolerated well), salt and pepper.
Then crumbling in a very small amount of feta (this is 🤔 on our emoji-based food list on the site but it’s fine for me. Try leaving this step out if feta cheese is not good for you.
Then blend and serve, or chill to make the consistency firmer.
