Cheese and Histamine Intolerance
Let’s talk about histamine intolerance and cheese.
How do you react to cheese? This delicious family rosti dish is a classic Jamie Oliver recipe and has some feta sprinkled on the top.
I’m okay with feta, but it is listed as medium histamine on the food list on my site. I’ve put particular care into the cheese area as this an area that lots of people ask about. As a basic rule of thumb it seems the more aged the cheese the higher the levels of histamine. So a blue veiny Stilton is absolutely off the chart, but a young mozzarella will tend to have much lower levels of histamine. Feta is softish and many seem to tolerate it, and as always it might have to be something you test.
