Low Histamine Blueberry “Ice Cream”
This is a delicious and very easy dish that works well with a high-speed blender. We’ve called it “ice cream” but if you leave it overnight it’ll be too hard, so serve immediately or leave in the freezer for just a couple of hours.
Our lives changed forever when we invested in a decent blender, and they’re surprisingly good value. We went for a Ninja blender, although others are available and you can spend a fortune on the top end ones. This recipe won’t work so well with a NutriBullet.
If you find some of these ingredients don't work for you (it happens in the weird world of histamine intolerance), then sub in whatever suits you.
Serves 2 dessert glasses
Ingredients:
1 cup frozen blueberries ✅
1 cup frozen coconut ✅
1 serving stevia ✅
1 cup coconut milk ✅
Instructions:
Combine all the ingredients in a high-powered blender and pulse until completely smooth.
Serve immediately or freeze in a silicon container to firm it up a bit more.
