Histamine intolerance and leftovers
In the good old days, there was nothing I used to love more than having a massive cook up on a Sunday, and then sorting out all my food for the week.
Lots of lovely portions waiting for me in the fridge every morning.
I didn’t have to think about food until Friday.

And then I discovered I was histamine intolerant. The leftovers thing doesn’t really work for us, because when it comes to histamine intolerance and leftovers, they increase in bacteria and histamine the more they’ve been left. In fact, some say the histamine load in leftovers can double every 20 minutes. Whoah!
There is a way round this and that is; when you cook your food and you’d like to eat leftovers afterwards, put them straight in the freezer compartment.
When you’re ready to eat, defrost thoroughly and heat up, obviously within safety guidelines.
So I can still do those big cook ups with dishes from The Histamine Intolerance Cookbook. I love it, and then I bought some reusable, recyclable silicon freezer bags to freeze everything. I’ve tried a few different brands and I find these reusable food storage bags to be the best, with no plastic involved. There’s so much broccoli soup in my freezer right now I can barely open it.
