A Histamine Friendly Shortbread For You
Some nut flours don’t agree with us when we are histamine intolerant. 😬
But there are plenty of workarounds. 👌
I made this delicious shortbread at the weekend with a mix of cassava flour, flaxseed (generally tolerated okay) and tiger nut flour. I first found out about tiger nuts from the excellent @drbeckycampbell and her brilliant book on histamine intolerance and have been been playing around with it since.
It’s not a nut - it’s a tuber and so is potentially much easier for us to tolerate. Though they are not as low carb as many nuts so I think you would want to use in small quantities.
This recipe was one I made up over the weekend… simply; cassava flour, tiger nut flour, ground flaxseed sprouted.
I didn’t get too exact with the quantities.
Mixed in with some melted butter, coconut milk, a little stevia and some ginger powder.
In the oven at 160C for 45 minutes or so. Bosh - a great shortbread.
